Chipotle Shrimp poppers
- 12 jalapenos
- 1/2 lb precooked & cleaned shrimp
- 1/3 can chipotle peppers
- 1 cup ricotta cheese
- 1 cup shredded mex cheese
- 1 tsp mayonnaise
- 1 tsp lime juice
- 1 green onion
- 1 tsp garlic salt
- 1 pinch chipotle powder
- 1 cup panko bread crumbs
- 1/3 cup parmesan cheese
- 2 tbsp olive oil
- 1 pinch red chili flakes
- preheat oven to 375
- cut jalapenos in half and scoop out seeds and veins
- rinse your cooked and cleaned shrimp chop into small pieces.once completed chop your onion add to bowl.
- add the rest of your fillings into bowl minus your chipotle.
- your chipotle peppers and sauce will need to take a quick spin in blender till smooth now add to your bowl.
- combine all ingredients check for seasoning.
- now stuff your peppers.
- topping: mix all ingredients together and top your poppers bake for 15-20 minutes.
