Black Bean and Pineapple Salsa
- 1 cup cooked drained black beans
- 12 cup finely diced pineapple
- 14 cup finely diced red bell pepper
- 14 cup finely diced lime segment
- 2 tablespoons finely diced red onions
- 2 tablespoons coarsely chopped fresh cilantro
- 12 teaspoon finely chopped jalapeno pepper
- 3 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 1 tablespoon agave syrup
- 1 teaspoon dried chipotle powder
- 12 teaspoon salt
- 12 teaspoon ground coriander
- In a bowl, combine black beans, pineapple, pepper, lime and onion.
- Add remaining ingredients and mix well.
- Serve immediately or cover and refrigerate up to 1 day.
