Thanksgiving Honey Apple Pumpkin Soup
- 3 cups chicken broth
- 1 onion, minced (small)
- 2 apples, peeled, cored and grated (medium)
- 2 tablespoons honey
- 2 cups pumpkin puree (canned)
- 1 cup apple juice
- 13 teaspoon pumpkin pie spice
- 14 cup half-and-half
- In a Dutch oven casserole, simmer together first 3 ingredients until onion and apple are soft.
- (This can be pureed in a food processor at this point, but it is not essential).
- Stir in the remaining ingredients and heat through.
- Serve with a teaspoon of low fat sour cream on top and a sprinkling of cinnamon.
