Miami Shrimp & Black Bean Pizza
- - Cleaned medium shrimp Safeway 1 lb For $8.99 thru 02/09
- 1-1/2 qt. Orange Molasses Barbecue Sauce
- 1-1/2 qt. Cooked black beans
- 12 each Pre-baked pizza crusts (12 inch)
- 3 qt. low moisture part skim milk mozzarella cheese, shredded
- 1-1/2 qt. mangos, peeled, pitted and chopped Whole Foods 2 ea For $4.00 thru 02/09
- 1-1/2 cups red onions, chopped
- 3/4 cup cilantro, chopped
- Brush shrimp with 1/2 of the Orange Barbecue Sauce.
- Grill or broil 2 to 4 minutes on each side or until shrimp turn pink.
- Place beans and remaining Orange Barbecue Sauce in food processor container; cover.
- Process until pureed.
- Spread each crust with 3/4 cup of the bean mixture; top with 1 cup cheese, 6 oz.
- shrimp, 1/2 cup tomato, 2 Tbsp.
- onion and 1 Tbsp.
- cilantro.
- Place crusts on parchment-covered full sheet pans.
- Bake at 400F for 10 to 12 minutes or until cheese is melted and crusts are lightly browned.
- Drizzle with additional Orange Barbecue Sauce.
