Mexican Meatloaf Rings Recipe kchurchill5

  1. First lets prepare the peppers.
  2. Cut the top and bottom of of each pepper and then cut the pepper into 3 rings, depending on the size.
  3. You want the rings to be about 2" thick.
  4. : Try to pick out large nice round peppers this makes for a great ring to stuff your meatloaf mixture in.
  5. You can use red, yellow, orange or green whatever you like best.
  6. Now, the meatloaf.
  7. Add all the ingredients in a large bowl and mix until well combined.
  8. Do not over mix.
  9. Preheat the oven to 350.
  10. While the oven preheats ... place the pepper rings on a baking sheet lined with parchment paper or aluminum foil and stuff with the meatloaf mixture into each pepper ring.
  11. Mound up slightly.
  12. Top the meatloaf with salsa and then bake for 30-45 minutes.
  13. The last 5 minutes top with cheese and continue to cook until melted.
  14. Remove and let set just a minute or two before serving.
  15. I love to serve this my Mexican mashed potatoes and a salad with a cilantro lime vinaigrette.
