Baked Tomatoes And Corn Recipe
- 1 can (16 ounce) tomatoes
- 1 Tbsp. Sugar Healthy pinch rosemary Healthy pinch black pepper
- 16 ounce Frzn corn kernels
- 1 x Green bell pepper, minced
- 2 x Onions, minced
- 2 Tbsp. Chili colorado (or possibly you can Use any warm sauce - use Less if desired)
- 1 Tbsp. Margarine
- 1/2 tsp Salt
- 2 c. Dry bread crumbs
- 1 c. Grated cheese
- Pour off the liquid from the canned tomatoes.
- Simmer the tomatoes with the sugar and spices for about 5 min.
- Add in the corn, green or possibly red pepper, onion, chili colorado or possibly chili sauce, margarine, and salt.
- Cook slowly for about 15 min.
- Spray a casserole dish with non-stick vegetable spray.
- Place alternate layers of vegetable mix, bread crumbs, and cheese, ending up with a layer of cheese.
- Bake in a 400 degree oven for about 20 min, or possibly till the top is brown.
- Serves 6.
