Bouljol Recipe
- 1 lb of boneless Saltfish (Salted Cod)
- 1 med Onion, finely minced
- 2 med Tomatoes, minced
- 1/4 c. Green Onions or possibly Scallions, minced with the green tops
- 1 x Sweet Red or possibly Yellow Pepper, rinsed, deseeded, and minced
- 1 sm Warm Pepper, rinsed, deseeded, and minced
- 1 x Hard-boiled Egg, minced
- 1 x Cucumber, peeled, deseeded, and finely minced
- 1 Tbsp. Granulated Sugar Juice of 2 fresh Limes
- 3 Tbsp. Vegetable Oil
- Boil the saltfish in water to extract some of the saltiness, then drain and clean, making sure to remove any stray bones.
- Cut up the fish into very small pcs.
- While fish is boiling, toss together the minced onion, tomatoes, scallions, sweet pepper, warm pepper, and minced hard-boiled egg.
- Add in the prepared cucumber and the salt fish.
- In a small mixing bowl, blend together the sugar, lime juice, and vegetable oil.
- Whisk till well blended.
- Pour the mix over the cooked fish and vegetables.
- Toss, then serve.
- Serves 4 or possibly 5
