Black Eyed Pea Hummus
- 3 strips Bacon
- 1 can 15.5 Oz Can, Black Eyed Peas, Drained
- 1 Tablespoon Olive Oil
- 2 Tablespoons Tahini
- 1/4 teaspoons Coriander
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- 1/2 teaspoons Garlic Powder
- 2 teaspoons Onion, (a Few Slices)
- 3 slices Jalapeno
- 1/4 cups Cilantro Leaves (about A Handful)
- 1/2 whole Lime, Juiced
- Line a microwave safe dish with paper towels, lay your bacon on top and cover with another paper towel.
- Microwave for 4:30 minutes.
- Or use your favorite method to make crispy bacon.
- Empty the can of drained black eyed peas into a food processor/chopper.
- Add the olive oil, tahini, coriander, salt, pepper, garlic powder, onion, jalapeno, cilantro, bacon and lime juice.
- Puree until smooth.
- Serve with pita, crackers, veggies, whatever you like!
