Mexican Pasta
- 1 lb ground beef, browned and drained
- 16 ounces chunky picante sauce (mild, medium, or hot)
- 2 cups water
- 2 cups uncooked macaroni or 2 cups rotini noodles
- 12 cup sour cream
- shredded cheese
- Combine Picante Sauce and water in a 10 or 12 inch skillet.
- Stir in pasta and ground beef.
- Bring to a boil, reduce heat, cover and simmer for 15 minutes.
- Remove from heat, uncover, stir gently and let stand for five minutes.
- Stir in sour cream.
- Serve immediately and top with cheese.
- For a sweeter version: Substitute 1lb.
- cooked, cubed chicken for the ground beef, and peach or pineapple salsa for the chunky picante sauce.
