Fried Cod with Rice, Corn & Sriracha Aioli
- Sriracha Aioli
- 2 cups KRAFT Extra Heavy Mayonnaise
- 7 Tbsp. Sriracha sauce (hot chili sauce)
- Fried Cod
- 16 each cod fillets (6 oz.)
- 2 cups all-purpose flour
- 8 each eggs, beaten
- 3 cups panko bread crumbs
- 2 tsp. salt, divided
- Rice & Corn
- 2 qt. cooked long-grain white rice
- 3 cups frozen whole kernel corn, heated
- 1/3 cup fresh parsley, chopped
- Sriracha Aioli: Combine ingredients.
- Fried Cod: Dredge fish in flour, dip in egg and lightly coat in breadcrumbs.
- Fry in 325 degrees F deep fryer 4 min.
- or until golden brown.
- Drain.
- Season with half the salt.
- Rice & Corn: Combine ingredients.
- Season with remaining salt.
- Heat until warmed through.
- Serve 1/2 cup rice mixture with 6 oz.
- fish and 2 Tbsp.
- Sriracha Aioli.
