Vegemite Basted Chicken

  1. Place lemon inside cavity of chicken.
  2. Secure legs and wings with string or skewers and place on a rack in a roasting pan.
  3. Brush with mixture of Vegemite*, butter and thyme.
  4. Bake in a moderate oven 180C, allowing 30 minutes per 500g (1 hour, 30 minutes).
  5. Baste at least twice during cooking with remaining Vegemite* mixture.
  6. Serve immediately with roasted vegetables and peas.
