Pasta with Broccoli and Spinach

  1. Preparation: chop the onion and shred the spinach leaves.
  2. Alternative to wine: white grape juice works just as well.
  3. Cook the pasta in a large quantity of boiling water until just tender.
  4. Drain and place in a greased, shallow, ovenproof dish and keep warm.
  5. Melt the butter in a large pan.
  6. Add the onion and cook over a low heat for 3 to 4 minutes.
  7. Add the nutmeg, broccoli and spinach.
  8. Pour over the wine or grape juice.
  9. Cover and cook over a low heat for 5 minutes.
  10. Spoon the vegetable mixture over the pasta.
  11. Top with the cheeses and bake at 180 cup for 5 minutes, or until the cheese has melted and browned.
  12. Serve immediately.
