Southwestern Chicken and Fettuccine
- 1 (9 ounce) packagerefrigerated fettuccine
- 2 (14 1/2 ounce) cansred gold diced tomatoes with jalapenos
- 1 (6 ounce) package southwestern chicken strips, cut into pieces (I use tyson brand)
- 1 cup shredded monterey jack cheese
- 1 medium avocado, peeled and chopped (optional)
- Cook fettuccine according to package directions; drain well.
- In a large saucepan combine tomatoes and chicken.
- Cook over medium heat until thickened, about 10 minutes; stirring occasionally.
- Stir in fettuccine.
- Sprinkle individual servings with cheese and avocado if using.
