Madeira Polenta
- 1 pkg. prepared polenta (plain), cubed
- cut into strips
- 1 can (8 oz.) button mushrooms, drained
- 1 can (8 oz.) shiitake
- portobella mushrooms, drained
- 1/4 cup olive oil
- 1/2 cup Madeira wine
- 2 tsp. margarine
- butter
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh thyme, chopped
- Over medium-high heat, add the olive oil to a medium sized skillet.
- Once warm, add the garlic, thyme, and parsely until softened.
- Add the polenta to the skillet along with the butter; saute for about 5 minutes, until the polenta starts to crumble slightly.
- Finally, add the mushrooms and Madiera wine and saute for another 3-5 minutes until heated thoroughly.
