Madeira Polenta

  1. Over medium-high heat, add the olive oil to a medium sized skillet.
  2. Once warm, add the garlic, thyme, and parsely until softened.
  3. Add the polenta to the skillet along with the butter; saute for about 5 minutes, until the polenta starts to crumble slightly.
  4. Finally, add the mushrooms and Madiera wine and saute for another 3-5 minutes until heated thoroughly.
