Chicken Cheesecake W/ Stove Top Stuffing Crust
- 1 (6 ounce) box chicken flavor stuffing mix
- 1 cup orange juice
- 12 cup water
- 14 cup margarine
- 12 ounces ricotta cheese
- 14 teaspoon black pepper
- 2 tablespoons margarine
- 14 cup green bell pepper, chopped
- 14 cup red bell pepper, chopped
- 1 tablespoon parsley flakes
- 14 cup toasted pecans, chopped
- 5 eggs
- 2 tablespoons flour
- 2 teaspoons grated romano cheese
- 23 cup chopped leeks or 23 cup onion
- 2 cloves chopped garlic
- 1 12 cups chopped cooked chicken breasts
- 14 teaspoon seasoning salt
- 1 teaspoon grated parmesan cheese
- 2 tablespoons chopped chives
- Make stuffing according to package directions.
- Press in the bottom and sides of a 9 inch springform pan.
- Preheat oven to 350 degrees.
- Blend together cheeses, eggs, flour, salts & pepper until smooth.
- In a skillet melt margarine, add leeks, peppers, garlic and chives and cook until soft about 5 minutes.
- Allow to cool then add cheese mixture.
- Stir in parsley and chicken.
- Pour into pan, smooth top and put pecans on top and bake for 30 minutes.
