Skillet Zucchini Parmesan

  1. Preheat oven to 400 degrees F.
  2. In a 10-inch skillet (I use cast iron), add marinara or tomato sauce and Italian seasoning.
  3. Stir gently, then layer zucchini rounds and onions (they can overlap).
  4. Sprinkle grated cheeses evenly across the top.
  5. Cover with aluminum foil and place on middle rack in the oven.
  6. Bake for 25 minutes, then remove foil and bake an additional 5 minutes to crisp up the cheeses.
  7. Serve with a side salad and bread sticks, or whatever you might enjoy.
  8. I grow zucchini in my home garden and this is a family favorite dish.
  9. Perfect for two!
