Skillet Zucchini Parmesan
- 2 cups Your Favorite Marinara Or Tomato Sauce
- 1- 1/2 teaspoon Dry Italian Seasoning
- 2 whole Medium Zucchini, Peeled, Cut Into 1/4-inch Rounds
- 1/2 whole Yellow Onion, Sliced Thinly
- 1 cup Freshly Grated Parmesan Cheese
- 1 cup Freshly Grated Mozzarella Cheese
- Preheat oven to 400 degrees F.
- In a 10-inch skillet (I use cast iron), add marinara or tomato sauce and Italian seasoning.
- Stir gently, then layer zucchini rounds and onions (they can overlap).
- Sprinkle grated cheeses evenly across the top.
- Cover with aluminum foil and place on middle rack in the oven.
- Bake for 25 minutes, then remove foil and bake an additional 5 minutes to crisp up the cheeses.
- Serve with a side salad and bread sticks, or whatever you might enjoy.
- I grow zucchini in my home garden and this is a family favorite dish.
