Green Pepper Jam Recipe
- 2 c. finely grnd red and green peppers (seeds removed)
- 6 1/2 c. sugar
- 1 1/2 c. apple vinegar
- 1 bottle Certo
- Drain off some juice from peppers.
- Bring sugar, vinegar and peppers to a hard boil, then set aside where it will keep warm but not boil for 15 to 20 min, uncover and stir occasionally.
- Bring again to a rolling boil for 2 min.
- Remove from heat and stir in Certo.
- Skim and stir for 5 min.
- Pour into jars and cover at once with warm paraffin.
- May take a week to come to a full "set".
