Green Pepper Jam Recipe

  1. Drain off some juice from peppers.
  2. Bring sugar, vinegar and peppers to a hard boil, then set aside where it will keep warm but not boil for 15 to 20 min, uncover and stir occasionally.
  3. Bring again to a rolling boil for 2 min.
  4. Remove from heat and stir in Certo.
  5. Skim and stir for 5 min.
  6. Pour into jars and cover at once with warm paraffin.
  7. May take a week to come to a full "set".
