Hearty Winter Minestrone Recipe
- 3/4 pound Italian sausage, casing removed
- 1 tbsp. vegetable oil
- 1/2 c. sliced carrot
- 1/2 c. sliced celery
- 1/2 c. green pepper, cut in 1 1/2-inch strips
- 1 can Campbell's Beef Broth
- 1 can Campbell's Zesty Tomato Soup/Sauce
- 1 1/2 c. water
- 1 c. bow-shaped pasta, uncooked
- Shape sausage into 3/4-inch meatballs.
- In saucepan, in warm oil, cook meatballs till browned, stirring often.
- Spoon off all but 1 Tbsp.
- drippings.
- Add in vegetables; cook 5 min, stirring often.
- Add in broth, soup and water.
- Heat to boiling.
- Add in pasta.
- Reduce heat to low.
- Simmer 10 min or possibly till pasta is done, stirring occasionally.
- Makes about 6 c. or possibly 4 servings.
- Recipes may be doubled.
