Fruit Bread Pudding

  1. HEAT oven to 350F (180C).
  2. REMOVE crusts from bread.
  3. Cut in half diagonally.
  4. Arrange 10 triangles around sides of greased 10 inch (25 cm) pie plate or quiche dish.
  5. SPREAD 4 triangles with jam.
  6. Place in bottom of pie plate.
  7. Layer 4 more triangles and half the fruit.
  8. Repeat layers.
  9. CUT remaining triangles in half.
  10. Arrange in centre.
  11. BEAT eggs with milk, sugar and lemon rind.
  12. Pour over bread.
  13. BAKE 30 - 35 minutes.
