Wheat Thin Meat or Vegetable Fritters

  1. In medium bowl, add eggs, milk and 2 tblsp.
  2. vegetable oil.
  3. Wisk until mixed.
  4. In a large bowl, mix flour, baking powder, Splenda.
  5. Add egg mixture and blend.
  6. Mix in carrots, and wheat thin crackers, green chiles,then meat.
  7. (Use only 1/2 pound of any meat).
  8. Heat frying pan or griddle with 1 tblsp.
  9. oil.
  10. Drop fritter batter by heaping tablespoon on griddle.
  11. Batter will spread some.
  12. Cook on medium heat until bottom is starting to turn brown and dry on the edges.
  13. Turn over and flatten a little with your spatula.
  14. Cook until bottom is slightly browned.
  15. Add more oil and cook second batch on the griddle.
  16. Keep cooked fritters warm in the oven on a platter.
  17. Serve with fried potatoes or scalloped potatoes.
