Banana Chocolate Cream Pie Recipe
- 3/4 c. sugar
- 1/4 c. cornstarch
- 1/4 c. plus 1 Tbsp. cocoa pwdr
- 1/4 tsp salt
- 2 c. lowfat milk
- 2 x egg yolks, beaten
- 1 tsp vanilla extract
- 3 x bananas, sliced, divided
- 1 x prepared (8-inch) graham cracker pie crust
- 1/2 c. whipping cream
- Mix the sugar, cornstarch, 1/4 c. cocoa and salt in top of a double boiler.
- Blend in 1/2 c. lowfat milk and yolks; stir till smooth.
- Stir in the remaining lowfat milk.
- Cook cocoa mix over boiling water, stirring continually, till thickened (about 5 min).
- Remove from heat.
- Stir in vanilla.
- Cold slightly.
- Arrange a third of banana slices in piecrust.
- Spoon half the chocolate mix over bananas.
- Repeat layering; cover loosely.
- Chill for 15 min.
- Beat the cream with an electric mixer set at high speed till soft peaks form, about 5 min.
- Top each serving with whipped cream.
- Garnish with remaining banana slices and cocoa.
- Servings: 6.
