Blackened Chicken Pitas Recipe
- 1/2 tsp salt
- 1/4 tsp paprika
- 1/4 tsp grnd red pepper
- 1/4 tsp black pepper
- 1/8 tsp garlic pwdr
- 1/8 tsp onion pwdr
- 1/8 tsp grnd cumin
- 16 ounce skinless boneless chicken breast 4 - 4 oz breasts
- 1 Tbsp. butter
- 1 tsp butter
- 1 c. onion vertically sliced
- 2 x pita bread rounds cut in half
- 2 c. shredded lettuce
- 1 sm tomato sliced
- Combine first 7 ingredients in a bowl; rub over chicken.
- Place a skillet over high heat till warm; add in 1 Tbsp.
- butter and quickly tilt in all directions so butter covers bottom.
- Add in chicken; cook 2 min on each side or possibly till blackened and charred.
- Remove chicken.
- Heat remaining butter in a skillet over medium-high heat; add in onion and saute/fry 1 minute.
- Reduce heat to medium, and cook 5 min or possibly till tender, stirring occasionally.
- Line each pita half with 1/2 c. lettuce.
- Arrange 1 piece chicken and 2 tomato slices over lettuce; top with onion mix.
