Arequipa Raisin Cake

  1. Heat oven to 350F.
  2. Combine flour, cornmeal and baking powder in large bowl.
  3. Whisk eggs, milk and butter until blended.
  4. Add to flour mixture; mix well.
  5. Stir in all remaining ingredients except coconut.
  6. Let stand 5 min.
  7. Pour into 13x9-inch baking dish sprayed with cooking spray; sprinkle with coconut.
  8. Bake 25 min.
  9. or until toothpick inserted in center comes out clean.
