Fruit and Nut Scrolls

  1. Place flour, sugar and butter in a food processor and process until mixture resembles breadcrumbs.
  2. Remove to a large bowl and stir in enough buttermilk to form a sticky dough.
  3. Knead on a lightly floured board until smooth.
  4. Roll dough into a 20 x 30cm rectangle, spread with peanut butter and sprinkle with dried fruit and pecans.
  5. Roll up on the longest side, like a Swiss roll, to form a sausage.
  6. Slice roll into 3cm slices and place cut side up on lined baking trays.
  7. Bake at 200C for 15 minutes until golden.
  8. Drizzle with honey to serve.
