Fruit and Nut Scrolls
- 2 cups self-raising flour
- 1 tablespoon caster sugar
- 30g butter
- 1-1 1/4 cups buttermilk
- 1/2 cup KRAFT* Light Smooth Peanut Spread , softened in the microwave for 30 seconds
- 3/4 cup mixed dried fruit
- 1/2 cup chopped pecan nuts
- honey, to drizzle
- Place flour, sugar and butter in a food processor and process until mixture resembles breadcrumbs.
- Remove to a large bowl and stir in enough buttermilk to form a sticky dough.
- Knead on a lightly floured board until smooth.
- Roll dough into a 20 x 30cm rectangle, spread with peanut butter and sprinkle with dried fruit and pecans.
- Roll up on the longest side, like a Swiss roll, to form a sausage.
- Slice roll into 3cm slices and place cut side up on lined baking trays.
- Bake at 200C for 15 minutes until golden.
- Drizzle with honey to serve.
