Pork & Sauerkraut Recipe
- 4 lbs. pork loin
- 3 lbs. sauerkraut
- 1 (16 ounce.) can tomatoes, cut up
- 2 carrots, cut into sticks
- 3 stalks celery, sliced into 1" pcs
- 4 tbsp. brown sugar
- 1 lg. onion, cut into wedges
- 2 bay leaves
- 1 lg. red apple, cut into wedges
- 1/2 teaspoon oregano, crushed
- 1/4 c. snipped parsley
- 1 teaspoon peppercorns
- Step 1: Place half of sauerkraut in the bottom of roasting pan.
- Add in pork loin.
- Put remaining sauerkraut over pork.
- Pour tomatoes over sauerkraut.
- Step 2: Add in celery, carrots, onion, apple, around edge of roasting pan, sprinkle brown sugar over tomatoes and sauerkraut.
- Add in remaining seasonings.
- Step 3: Cook, covered in 325 degree oven for 3 to 3 1/2 hrs or possibly till meat is done.
- Baste with juice frequently.
- Serves 6 to 8.
