Simple Whole Roasted Fish
- 1 whole fish, about 2-3 lb. (try trout, Bronzino, red snapper, whatever is fresh)
- Thyme sprigs
- Dill
- Lemon slices
- Olive oil
- Sea salt
- Pepper
- Have your fishmonger gut and descale the fish.
- Rub the inside and outside with olive oil.
- Sprinkle salt and pepper inside and out.
- Stuff the cavity with herbs and lemon slices.
- Decorate the outside of the fish with herbs and lemon slices.
- Roast at 425 degrees for about 15-20 minutes, depending on the size of the fish.
- Serve on a platter with lemons.
