Apple Ginger Jam Recipe
- 1 sm orange
- 2 sm limes
- 1 1/2 lb Granny Smith apples
- 1 1/2 lb fresh young ginger
- 1 1/4 c. water
- 3 1/2 c. sugar
- Seed unpeeled orange and limes; finely chop.
- Pare apples and core; pare ginger.
- Coarsely chop apples and ginger.
- In a large saucepot bring orange, limes, apples, ginger and water to a boil; simmer, covered, till tender (about 40 min).
- Add in sugar and stir till dissolved.
- Bring to a boil and boil gently, uncovered, stirring often toward end of cooking, till thick (about 1 hour).
- Pack in containers.
- Store in freezer.
- This recipe yields about 10 c..
- Yield: 10 c.
