Apricot Chicken Casserole

  1. Place chicken drumsticks in a casserole dish.
  2. Mix onion soup mix, cornflour and ginger into the apricot puree.
  3. Season with salt and pepper.
  4. Pour over the chicken.
  5. Cover and bake at 180 degrees Celsius (350 degrees Fahrenheit) for 50 to- 55 minutes or until chicken is cooked.
  6. To serve, sprinkle with chopped chives.
