Banana Meringue Delight Recipe
- MERINGUE CRUST
- 3 x Egg Whites
- 2 Tbsp. Sugar
- 1/4 tsp Vanilla
- 1 dsh Salt
- 1/8 tsp Cream of Tartar FILLING
- 2 ounce Vanilla Pudding Instant
- 3 c. Skim Lowfat milk
- 2 lrg Bananas TOPPING
- 8 x Graham Cracker Squares Grnd
- Preheat oven: 300
- In large bowl, beat egg whites till slightly stiff.
- Gradually add in sugar and cream of tartar and continue to beat.
- Add in vanilla and salt and continue beating till whites stand in stiff peaks.
- Spray 9" x 9" glassbaking dish with non-stick cooking spray.
- spread meringue over entire bottom and sides of dish to create a crust.
- Bake in 300 degree oven for 45minutes.
- Remove and cold.
- After crust has cooled, prepare pudding mix according to package directions and mix in sliced bananas.
- Pour pudding mix into crust and sprinkle grnd graham crackers on top.
- Refrigerateand serve.
