Chicken and Spinach Salad with Roast Pumpkin
- 500g chicken tenderloins Whole Foods 1 lb For $3.99 thru 02/09
- spray oil
- 800g pumpkin, cut into cubes and roasted until tender
- 100g baby spinach leaves
- 1 bunch asparagus, blanched
- 100g roasted cashews
- 1/2 cup KRAFT French Dressing
- Spray the chicken tenders with oil and char grill or BBQ until golden and cooked through.
- Assemble the salad ingredients onto a platter, top with the pumpkin and hot chicken.
- Drizzle with the dressing and serve.
