Southern Chocolate Chess Pie Recipe
- 1 (4 ounce.) pkg. sweet cooking chocolate
- 1/4 c. butter
- 1 2/3 c. evaporated lowfat milk
- 1 1/2 c. sugar
- 3 tbsp. cornstarch
- 1/8 teaspoon salt
- 2 Large eggs
- 1 teaspoon vanilla
- 1 unbaked pie shell
- 1 1/3 c. flaked coconut
- 1/2 c. minced pecans
- Mix chocolate with butter in saucepan.
- Place over low heat stirring constantly till blended.
- Remove from heat; blend in evaporated lowfat milk gradually.
- Mix sugar, cornstarch and salt in a bowl.
- Beat in Large eggs and vanilla.
- Blend in chocolate mix gradually.
- Pour into pie shell.
- Combine coconut and pecans and sprinkle over filling.
- Bake at 375 degrees for 45-50 min or possibly till puffed and brown.
- Cover loosely with aluminum foil during last 15 min of baking.
- Cold 4 hrs.
