Tuna Seafood Patties

  1. Mix drained tuna, dressing, mustard, vegetables, pimento, seasonings and 1/2 cup of the bread crumbs.
  2. Shape mixture into 15 (2-inch) balls.
  3. Roll in remaining 3/4 cup bread crumbs, coating well.
  4. Flatten balls into small patties.
  5. Refrigerate 30 minutes. Heat 1/2 cup oil in large skillet over medium-high heat.
  6. Add tuna patties.
  7. Cook 5 minutes on each side or until golden brown, adding additional oil, as needed.
  8. Remove from skillet; drain on paper towels.
  9. Makes 8 servings.
