Tuna Seafood Patties
- 1 c. (12 1/2 oz.) tuna in water
- 1/4 c. Dijon mustard
- 1/4 c. finely chopped celery
- 1/4 c. finely chopped green pepper
- 1/4 c. finely chopped green onions
- 1 (2 oz.) jar chopped pimento, drained
- 1 1/4 c. dry bread crumbs, divided
- 1/2 c. Miracle Whip
- oil
- 1/2 tsp. salt
- 1/2 tsp. pepper
- Mix drained tuna, dressing, mustard, vegetables, pimento, seasonings and 1/2 cup of the bread crumbs.
- Shape mixture into 15 (2-inch) balls.
- Roll in remaining 3/4 cup bread crumbs, coating well.
- Flatten balls into small patties.
- Refrigerate 30 minutes. Heat 1/2 cup oil in large skillet over medium-high heat.
- Add tuna patties.
- Cook 5 minutes on each side or until golden brown, adding additional oil, as needed.
- Remove from skillet; drain on paper towels.
- Makes 8 servings.
