Fat Free Cheesecake
- 14 cup fat free graham crackers (crushed)
- 1 tablespoon sugar substitute
- 12 cup all-bran cereal (crushed)
- 1 tablespoon lowfat margarine (Brummel and Brown is good)
- 8 ounces fat free cream cheese
- 14 cup sugar
- 14 cup sugar substitute
- 2 tablespoons cornstarch
- 8 ounces fat free sour cream
- 1 teaspoon vanilla extract
- 2 tablespoons amaretto flavored coffee creamer
- 12 teaspoon salt
- 3 egg whites
- Preheat to 350 degrees.
- Mix together crushed grahams and bran cereal, 3 Tbs sugar.
- Stir in melted butter and press into bottom of glass pie pan.
- In large bowl, combine cream cheese, sugar, splenda, cornstarch and mix till smooth, then add sour cream, vanilla, egg whites, amaretto creamer, and salt.
- Beat on low, pour over crust.
- Bake about 50 minutes.
- Refrigerate and serve when cool.
