Cheesy Chicken Enchilada Bake
- 2 Tbsp. non-hydrogenated margarine
- 1/2 cup chopped onions Safeway 1 lb For $1.49 thru 02/09
- 2/3 cup Cheez Whiz Jalapeno Tex Mex Cheese Spread
- 1/2 cup milk
- 2 cups chopped cooked chicken Whole Foods 1 lb For $3.99 thru 02/09
- 1/2 cup sliced black olives
- 8 small flour tortillas
- 1/2 cup salsa
- Heat oven to 350F.
- Melt margarine in large saucepan on medium heat.
- Add onions; cook and stir 3 to 5 min.
- or until softened.
- Add Cheez Whiz and milk; cook on low heat 5 min.
- or until Cheez Whiz is completely melted and sauce is well blended, stirring frequently.
- Add chicken and olives; mix well.
- Remove from heat.
- Spoon 1/4 cup chicken mixture down centre of each tortilla; roll up.
- Place, seam sides down, in 12x8-inch baking dish; top with salsa.
- Bake 15 min.
