Orange-Glazed Pork Roulade

  1. Preheat oven to 425F.
  2. Chop green pepper, leek, carrot, and fennel bulb and saute in oil for 5 minutes.
  3. Stir in sun-dried tomatoes, Parmesan cheese, and Italian seasoning.
  4. Spread mixture over pork.
  5. Roll and tie.
  6. Cover with foil; roast seam side down for 10 minutes.
  7. Reduce heat to 350F; cook for another 45 minutes.
  8. Uncover roast and brush with orange marmalade.
  9. Roast for 15 minutes more, or until internal temperature reads 155F.
