Island Black Bean Hummus Toppers
- 1 Tbsp. olive oil
- 1 cup chopped red onion
- 1 jalapeno pepper, seeded, finely chopped
- 1 can (15 oz.) black beans, rinsed
- 1/4 cup cilantro
- 1 tsp. lime zest
- 2 Tbsp. fresh lime juice
- 1/2 tsp. hot pepper sauce
- 72 RITZ Crackers
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1/2 cup finely chopped red peppers
- 1/2 cup finely chopped avocados
- HEAT oil in small skillet on medium heat.
- Add onions and jalapenos; cook and stir 5 min.
- or until crisp-tender.
- Cool slightly.
- TRANSFER onion mixture to blender.
- Add next 5 ingredients; blend until smooth.
- TOP crackers with bean mixture, sour cream, red peppers and avocados.
- Serve immediately.
