Vickys Flour Tortillas

  1. Mix the flour, salt, xanthan gum and baking powder together
  2. Stir in the oil then start adding the water in a steady stream, stirring as you go to bring it all together
  3. Divide the dough into six and shape into balls with wet hands
  4. Roll out the dough to an 8inch circle between sheets of lightly oil sprayed baking parchment so they don't stick
  5. Heat a non-stick frying pan and cook the tortillas for 45 seconds or until the underside starts to brown, then flip over and cook the other side for 45 seconds.
  6. These are better undercooked as if you overdo them they won't be pliable
  7. Best eaten warm and you can soften them in the microwave in just 10 seconds to freshen them up
