Vickys Flour Tortillas
- 240 grams Vickys Gluten-Free All-Purpose Flour Mix
- 1 tsp xanthan gum
- 1 1/2 tsp baking powder
- 1 tsp salt
- 4 tsp olive oil
- 120 ml - 240ml warm water
- Mix the flour, salt, xanthan gum and baking powder together
- Stir in the oil then start adding the water in a steady stream, stirring as you go to bring it all together
- Divide the dough into six and shape into balls with wet hands
- Roll out the dough to an 8inch circle between sheets of lightly oil sprayed baking parchment so they don't stick
- Heat a non-stick frying pan and cook the tortillas for 45 seconds or until the underside starts to brown, then flip over and cook the other side for 45 seconds.
- These are better undercooked as if you overdo them they won't be pliable
- Best eaten warm and you can soften them in the microwave in just 10 seconds to freshen them up
