Sweet (Potato) Sandwich

• 2 De Wafelbakkers sweet potato pancakes
• 1/4 c. part-skim ricotta
• 1/2 pear
• cinnamon

1. Heat 2 De Wafelbakkers sweet potato pancakes and spread ricotta over both.
2. Place pear slices and dust cinnamon on top of one pancake, and cover with the other.
