Loaded Potatoes & Chicken Skillet
- 4 whole Strips Bacon
- 3 whole Medium Potatoes, Cubed
- 2 whole Boneless Chicken Breasts, Cubed
- 1 Tablespoon Olive Oil
- 1 whole Small Onion, Diced
- 1 cup Diced Red And/or Green Bell Peppers
- 4 ounces, weight Monterey Jack Cheese
- Seasoned Salt And Pepper, to taste
- Cook bacon and set aside.
- Bring a pot of water to boil, add potatoes and boil for 5-8 minutes or until potatoes are softened.
- In a large skillet, cook chicken; drain any leftover fat or oils.
- Return skillet to the stove and heat olive oil in it over medium high heat.
- Add onions and bell peppers, cook for 3 minutes.
- Add potatoes to the skillet and cook for another 3-5 minutes or until potatoes are slightly browned.
- Add chicken to the skillet, top with cheese and bacon, cover and cook until cheese is melted.
- Note: I added season salt and pepper to taste.
