Loaded Potatoes & Chicken Skillet

  1. Cook bacon and set aside.
  2. Bring a pot of water to boil, add potatoes and boil for 5-8 minutes or until potatoes are softened.
  3. In a large skillet, cook chicken; drain any leftover fat or oils.
  4. Return skillet to the stove and heat olive oil in it over medium high heat.
  5. Add onions and bell peppers, cook for 3 minutes.
  6. Add potatoes to the skillet and cook for another 3-5 minutes or until potatoes are slightly browned.
  7. Add chicken to the skillet, top with cheese and bacon, cover and cook until cheese is melted.
  8. Note: I added season salt and pepper to taste.
