Savory Gaspacho

  1. Cut the vegetables in chunks and pulse in a food processor until finely chopped.
  2. Combine them with the broth ingredients.
  3. Mix, cover and refrigerate until thoroughly chilled.
  4. Serve topped with a dollop of low-fat, plain yogurt.
