Whole Wheat Mincemeat Pastry Squares
- 1 1/2 cups whole wheat flour
- 1 tablespoon brown sugar
- 1/4 teaspoon salt
- 4 tablespoons butter
- 4 tablespoons canola oil or olive oil
- 1/2 cup sour cream
- 1 cup mincemeat prepared, homemade or store-bought
- 3/4 cup apples peeled and chopped
- 4 tablespoons sugar
- 5 tablespoons apricots, dried chopped
- 1/2 cup powdered sugar
- 2 teaspoons lemon juice fresh, up to 3 teaspoons
- Preheat oven to 375F (190C).
- Coat large cookie sheet with cooking spray or baking mat.
- Lightly spoon flour into measuring cup, level off.
- In medium bowl, whisk together flour, brown sugar and salt.
- Using pastry blender or your fingers, cut in butter until mixture resembles coarse crumbs.
- Add sour cream, stirring lightly with fork.
- (Dough may be crumbly.)
- Divide dough in half, shape each into a ball.
- Flatten balls, smooth edges.
- Roll each ball lightly on well-floured working surface or large cutting board to 16x8-inch rectangle.
- Cut each into four 8x4-inch rectangles, forming 8 rectangles.
- In small bowl, mix together all filling ingredients.
- Add about 1/4 cup filling on 1 end of each small rectangle.
- Fold pastry in half over filling, press edges with fork to seal.
- Pierce with a fork in several places on top of each pastry square.
- Transfer squares on prepared cookie sheet.
- Bake for 20 to 25 minutes or until golden brown.
- Remove from the oven and let cool for a few minutes.
- Stir together glaze ingredients, drizzle over each pastry square.
- Serve warm or at room temperature.
- Make 8 pastry squares.
