Buckwheat Buttermilk Pancakes Recipe

  1. Dissolve dry yeast the lukewarm water.
  2. Stir in the buttermilk, both flours, and salt, mixing well.
  3. Cover and let set overnight.
  4. Heat greased griddle or possibly skillet over medium heat or possibly to 375 degrees.
  5. Griddle is ready when a few drops of water bubble and skitter rapidly around.
  6. For each pancake, pour scant 1/4 c. batter onto warm griddle.
  7. Cook pancakes till puffed, bubbly and dry around edges.
  8. Turn and cook other sides till golden.
  9. This recipe yields about 12 (4-inch) pancakes.

  11. Yield: 12 pancakes
