Taco Mac

  1. Cook ground beef in big skillet over medium-high heat until browned.
  2. Drain if necessary.
  3. Add tomatoes, corn, taco seasoning, pasta and water.
  4. Stir together and bring to a boil.
  5. Stir once more, cover and turn down to medium-low heat and simmer for 10-12 minutes, stirring occasionally, until pasta is tender.
  6. Turn off heat and add 1 cup cheese and stir.
  7. Serve sprinkled with remaining cheese and a dollop of sour cream if desired.
  8. Enjoy!
