True Chicken Mole
- 4 chicken thighs
- 1 cup white wine
- 1 cup water
- salt and pepper
- 1 small bay leaf
- 1 banana, small
- 14 red bell pepper
- 14 green bell pepper
- 14 cup tomatoes, peeled and chopped
- 1 garlic clove
- 14 onion, large
- 1 pinch ginger
- 1 ounce unsweetened chocolate, melted
- 1 tablespoon almonds, blanched, chopped
- 1 tablespoon salted peanuts, crushed
- 1 tablespoon raisins, soaked in
- stock
- Place chicken, wine, water, salt, pepper and the bay leaf in a casserole and boil for 20 minutes.
- Drain, reserving liquid and discard leaf.
- Skin thighs and return to casserole or a large skillet.
- Place liquid and all other ingredients (except for the almonds, peanuts and raisins) in a food processor and blend.
- Cover chicken with this mixture and cook for 45 minutes over low heat.
- The next day add the almonds, peanuts and raisins before warming to serve.
