True Chicken Mole

  1. Place chicken, wine, water, salt, pepper and the bay leaf in a casserole and boil for 20 minutes.
  2. Drain, reserving liquid and discard leaf.
  3. Skin thighs and return to casserole or a large skillet.
  4. Place liquid and all other ingredients (except for the almonds, peanuts and raisins) in a food processor and blend.
  5. Cover chicken with this mixture and cook for 45 minutes over low heat.
  6. The next day add the almonds, peanuts and raisins before warming to serve.
