Fresh Blueberry Flan
- 1 cup flour
- 1/3 cup sugar
- 1/2 cup cold butter, cut up
- 1 pkg. (4-serving size) Jell-O Vanilla Instant Pudding
- 1 cup cold 1% milk
- 1 cup thawed Cool Whip Light Whipped Topping
- 2 cups fresh blueberries Whole Foods 3 For $10.00 thru 02/09
- zest and 3 Tbsp. juice from 1 orange Safeway 1 lb For $0.79 thru 02/09
- 1/4 cup Kraft Pure Orange Marmalade
- Heat oven to 425 degrees F.
- Mix flour and sugar in large bowl.
- Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs; press onto bottom and 1 inch up side of 9-inch flan pan.
- Bake 12 min.
- or until golden brown.
- Cool completely.
- Beat pudding mix and milk with whisk in medium bowl 2 min.
- (Pudding will be thick.)
- Add Cool Whip, zest and juice; mix well.
- Spread onto bottom of crust; top with berries.
- Microwave marmalade in microwaveable bowl on HIGH 30 sec.
- ; stir.
- Spoon over berries.
- Refrigerate 1 hour
