Mary'S Award Winning Chili
- 3 lb. lean ground beef
- 1 Tbsp. olive oil
- 1 large yellow onion, chopped
- 1 large green pepper, chopped
- 3 to 4 cloves garlic, minced fine
- 1 c. ketchup
- 1 to 1 1/2 c. water
- 2 Tbsp. Worcestershire sauce
- 2 Tbsp. chili powder
- 1 Tbsp. paprika
- 2 Tbsp. brown sugar
- 1/3 c. vinegar (drained from jar of hot peppers)
- 4 to 5 dashes Tabasco sauce
- 2 cans red kidney beans
- Brown beef in olive oil. Add onion, pepper and garlic, stirring frequently. Add seasonings, ketchup and water. Add brown sugar and vinegar. Taste (add salt and pepper, if necessary, or more Tabasco sauce).
- Simmer for 1 hour, then add beans and heat through.
- Serve over rice. Garnish with shredded cheese.
