Pesto Tomatoes
- 6 whole Tomatoes
- Fresh Pesto
- Salt
- Pepper
- 1 cup Feta Cheese
- 2 cups Mozzarella Cheese
- Fresh Basil (optional)
- Wash tomatoes.
- Slice tomatoes about 1/4 1/2 inch thick.
- The thicker the better if you really like the tomato flavor.
- Place slices in a single layer in a casserole dish.
- Spread 1 teaspoon or more of pesto onto each slice of tomato.
- We really like the pesto flavor, so I am generous with it.
- Just play around with it until you figure out how much you like.
- Salt and pepper to taste.
- Sprinkle crumbled feta cheese over tomatoes.
- Sprinkle mozzarella cheese over tomatoes.
- You can sprinkle some fresh basil on at this point if you wish.
- Bake in a 400 degree oven for 25-30 minutes or until the cheese is well melted and has started browning the way you want it.
