Ginerbread Spice Cake

  1. Preheat ove to 375F Coat a 9x5-inch loaf pan with cooking spray.
  2. In bowl or zipper lock bag mis the flours with the baking soda, ginger, cinnamon, cloves, allspice, and salt; set aside.
  3. In a large mixing bowl beat the sugar, oil and egg until smooth.
  4. Beat in veggie purees, yogurt, molasses, vanilla and orange zest.
  5. Add the flour mixture a bit at a timeand mix until smooth.
  6. Pour the batter into the pan and smooth the top.
  7. Bake until a toothpick comes out clean when inserted into the center of the cake, 45 to 50 minutes.
