Christmas-Pretty White Chocolate Bark
- 2 (6 ounce) packages white chocolate baking squares
- 1 cup sweetened flaked coconut
- 12 cup pistachio nut
- 12 cup dried cherries
- Melt the white chocolate.
- White chocolate is tempermental; do not use the microwave.
- It may harden in the microwave or develop a slight caramelized taste.
- Instead, recommends Chocolatier magazine, firm it up in the freezer, then grate it and melt in a double boiler.
- Mix in the coconut, pistachios, and cherries.
- Pour into a parchment-lined 9-inch square pan.
- Refrigerate 1 hour until set.
- For a beautiful presentation, cut the bark into rounds with a 2-1/2 inch cookie cutter.
- Or simply break into serving pieces.
