Black Bean, Corn And Pepper Salad Recipe
- 1 can black beans (15 ounce) liquid removed & rinsed
- 1 can cannellini beans (15 ounce) liquid removed & rinsed
- 1 pkt frzn corn kernels (10 ounce) thawed
- 1 lrg red bell pepper seeded, fine minced
- 2 x jalapeno chiles seeded, fine minced
- 1/2 c. firmly packed minced cilantro
- 1/4 c. lime juice
- 2 Tbsp. salad oil Salt and pepper Lettuce leaves rinsed & crisped
- In a large bowl, combine beans, corn, bell pepper, chiles, minced cilantro, lime juice, and oil; mix lightly.
- Season to taste with salt and pepper.
- Cover and chill for at least 1 hour or possibly up to a day.
- To serve, line a serving bowl with lettuce leaves; spoon in bean mix.
- (Or possibly spoon bean mix into lettuce c. on individual plates.)
- Garnish with lime wedges and cilantro sprigs, if you like.
